Why your strawberry shortbread is a summer must-have

  • Scandinavian simplicity: A crisp shortbread base, a hint of lemon, and a generous layer of fruity jam – minimalist and irresistible.
  • Delightfully light: Perfect as a picnic treat, a brunch dessert, or a surprising finish to a dinner party.
  • With the pure flavors of Nicolas Vahé: Discover the double strawberry jam as a flavor booster.

What you’ll need

  • 200 g unsalted butter (at room temperature)
  • 75 g fine granulated sugar
  • 1 tsp vanilla extract
  • 250 g flour
  • Pinch of salt
  • 2 tbsp cornstarch
  • The zest of ½ lemon
  • 5-6 tbsp Nicolas Vahé double strawberry jam
  • Fresh strawberries, and optionally mint, for the finishing touch

How to make strawberry shortbread

  1. Beat the butter and sugar until light and fluffy. Add the vanilla extract and lemon zest.
  2. Sift the flour, cornstarch, and salt over the bowl and mix into a soft, compact dough.
  3. Wrap the dough in cling film and chill for at least 30 minutes in the fridge.
  4. Preheat the oven to 180°C. Press the dough into a baking tin lined with parchment paper or shape into small cookies about 1 cm thick.
  5. Bake: 20–25 minutes for a large base, 12–15 minutes for smaller cookies. They should be lightly golden.
  6. Let cool completely.
