Recipe Poulet au Vinaigre – step by step

Ingredients (serves 4)

  • 1 whole chicken (cut into 8 pieces) or 1.2 kg chicken parts
  • 2 tbsp Nicolas Vahé olive oil
  • 50 g butter
  • 2 red onions, thinly sliced
  • 4 cloves garlic, crushed
  • 100 ml Nicolas Vahé sherry vinegar
  • 200 ml chicken stock
  • 100 ml heavy cream
  • 2 tbsp wholegrain mustard
  • Nicolas Vahé French sea salt & black pepper
  • a few sprigs of fresh tarragon or parsley

Preparation

  1. Generously season the chicken with sea salt and black pepper. Heat the olive oil with half the butter in a large (casserole) pan.
  2. Brown the chicken pieces on all sides. Remove from the pan and set aside.
  3. Sauté the onions and garlic in the remaining fat until soft. Pour in the sherry vinegar and let it gently reduce until the sharp aroma fades (about 2 minutes).
  4. Return the chicken to the pan. Add the stock and let it simmer for 30 minutes with the lid slightly ajar.
  5. Add the cream and mustard and let it simmer for another 10 minutes, uncovered, until the sauce thickens and the chicken is meltingly tender.
  6. Stir in the rest of the butter, taste, and adjust seasoning with extra sea salt and pepper if needed.
  7. Garnish with fresh tarragon or parsley and serve immediately with baguette or mashed potatoes.
